Ingredients

The following ingredients have 4 Servings
  • 14 ozs canned red Kidney beans (rinsed and drained)
  • 14 ozs canned cannellini beans (rinsed and drained)
  • 2 cups breadcrumbs
  • 2 tsps mild Chili powder
  • 1 Tbsp chopped cilantro
  • 2 Tbsps tomato Ketchup
  • 1 egg
  • salt
  • peppers
  • 4 slices flat Bread
  • Lettuce
  • 8 slices tomatoes
  • 0.667 cup low-fat Yogurt
  • 1 lemon (juice and finely grated zest)
  • 1 pinch White pepper

Instruction

  • Heat the grill to high. Line the grill pan with non-stick baking paper.
  • Put the beans into a large bowl and mash roughly with a potato masher, keeping some beans whole. Add the breadcrumbs, chilli powder, coriander, egg and ketchup. Season to taste with salt and pepper, then mix together well with a fork.
  • Divide the mixture into 8, then with wet hands, shape into burgers. Place in the grill pan and grill for 4-5 minutes on each side until golden and crisp.
  • To serve: put the lettuce and tomatoes on the flat bread and put 2 burgers on top of each.
  • To garnish: mix together the yoghurt, 1 tablespoon lemon juice and pepper. Spoon on top of the burgers and garnish with lemon zest.
