  • 0.333 cup(s) Cooked asparagus cut up
  • 1 pinch Table salt
  • 1 pinch Black pepper
  • 1 tbsp(s) Grated Parmesan cheese
  • 0.5 medium Plum tomato(es) chopped
  • 1 tbsp(s) Uncooked scallion(s) sliced

Instruction

  • Stir together egg, egg white, asparagus, salt and pepper in microwave-safe cup with a fork.
  • Microwave 45 seconds and stir; sprinkle with cheese. Microwave until eggs are set but still creamy, about 15 seconds more.
  • Sprinkle with tomato and scallions.
