Ingredients
The following ingredients have 4 Servings
- 1 Tbsp olive oil
- 1 red bell pepper (diced)
- 1 yellow bell pepper (diced)
- 1 onion (diced)
- 1 zucchini (diced)
- kosher salt, pepper, crushed red pepper flakes
- 4 cloves garlic (minced)
- 2 Tbsps balsamic vinegar
- 2 Naan flatbreads
- 1 10 oz container hummus (I used Sabra Roasted Red Pepper Hummus)
- 2 oz crumbled goat cheese
Instruction
- Set a skillet over medium heat and add the olive oil. When the olive oil is hot add the diced red pepper, yellow pepper, onion, zucchini, kosher salt, pepper, and crushed red pepper flakes. Cook 7 to 8 minutes, stirring occasionally.
- Add the garlic and balsamic vinegar and cook 2 to 3 more minutes.
- Lightly toast the Naan breads in the oven or toaster oven. Spread the hummus evenly on the toasted Naan bread.
- Top each Naan bread with the veggies and sprinkle evenly with goat cheese crumbles.
