  • 1 cup shiitake mushrooms (fresh or dried*), finely chopped 
  • 3 cups cabbage, shredded
  • 1/2 cup carrots, shredded
  • 1 tablespoon green onions, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 tablespoon vegetable stock powder (optional)
  • 1/2 tablespoon white pepper
  • 1 teaspoon sugar
  • 2 tablespoons cornstarch
  • 1 package spring roll wrappers, fresh or defrosted (25 pieces)
  • 2 cups cooking oil (for deep frying)
  • 2 tablespoons black vinegar
  • 1 teaspoon sriracha (optional)
  • 1 teaspoon green onions, finely sliced
