Ingredients

The following ingredients have 4 Servings
  • 1 Chinese eggplant (cut in half)
  • 2 Tablespoon Unagi sauce or Teriyaki sauce (or to taste)
  • 1 teaspoon toasted sesame seeds
  • 2 Tablespoon thinly sliced green onion

Instruction

  • Steam the eggplants until tender.
  • When cool enough to handle, cut the eggplant vertically without cutting through. Then, score the flesh of the eggplants so they look like tiny squares or rectangles.
  • Line the fryer basket with grill mat or lightly greased aluminum foil.
  • Brush both sides of the eggplants with Unagi sauce (or Teriyaki sauce). Place the eggplant into the fryer basket skin side down and air fry at 400F (200C) for about 4-5 minutes.
  • Sprinkle some sesame seeds and green onion to serve.
