Ingredients
The following ingredients have 2 Servings
- 3 large tortillas
- 1 tsp Extra Virgin Olive OIl
- 1 cup California green olives (Pitted)
- 1 cup black olives (halved)
- 1/2 cup red onions (finely chopped)
- 1 cup cheddar cheese (shredded (optional))
- 1/2 cup vegan cheese (optional, shredded)
- 1 cup feta cheese
- 1 cup hummus
- 1/2 cup Pita Chips (coarsely crushed)
- 1/4 cup jalapeno (chopped)
- 2 tsp Capers
- 1/4 cup cherry tomatoes (chopped)
- 1 cup Chick peas (Canned)
Instruction
- Preheat oven to 250 degrees
- Take the tortillas and brush them with Sage oil or oil of your choice.
- Cut the tortillas, pizza style.
- Place in oven for about 15 minutes or until brown and crispy
- Remove and allow to cool. Also, turn the heat to 350 degrees.
- Spread a generous amount of Hummus on each chip
- Sprinkle the cheddar and / or vegan cheese on top of the hummus
- Sprinkle the onions on the nachos
- Add the olives at this point
- If you are using chick peas, add them now
- Add the cherry tomatoes, jalapenos and Stacy Pita chips
- Place the nachos in the oven for about 15 minutes
- Add the Feta cheese after the nachos have been in the oven for 10 minutes
- Remove the nachos and top with capers
- Allow the Greek Nachos to cool for a few minutes before serving
