Ingredients

The following ingredients have 2 Servings
  • 3 large tortillas
  • 1 tsp Extra Virgin Olive OIl
  • 1 cup California green olives (Pitted)
  • 1 cup black olives (halved)
  • 1/2 cup red onions (finely chopped)
  • 1 cup cheddar cheese (shredded (optional))
  • 1/2 cup vegan cheese (optional, shredded)
  • 1 cup feta cheese
  • 1 cup hummus
  • 1/2 cup Pita Chips (coarsely crushed)
  • 1/4 cup jalapeno (chopped)
  • 2 tsp Capers
  • 1/4 cup cherry tomatoes (chopped)
  • 1 cup Chick peas (Canned)

Instruction

  • Preheat oven to 250 degrees
  • Take the tortillas and brush them with Sage oil or oil of your choice.
  • Cut the tortillas, pizza style.
  • Place in oven for about 15 minutes or until brown and crispy
  • Remove and allow to cool. Also, turn the heat to 350 degrees.
  • Spread a generous amount of Hummus on each chip
  • Sprinkle the cheddar and / or vegan cheese on top of the hummus
  • Sprinkle the onions on the nachos
  • Add the olives at this point
  • If you are using chick peas, add them now
  • Add the cherry tomatoes, jalapenos and Stacy Pita chips
  • Place the nachos in the oven for about 15 minutes
  • Add the Feta cheese after the nachos have been in the oven for 10 minutes
  • Remove the nachos and top with capers
  • Allow the Greek Nachos to cool for a few minutes before serving
