Ingredients
The following ingredients have 5 Servings
- 2 potatoes cubed peeled
- 1 sweet potato cubed medium peeled
- 1 zucchini halved medium sliced
- 6 broccoli florets
- 6 cauliflower florets
- 1 cup dried breadcrumbs
- 50 g butter
- 1 leek finely chopped
- 1 green capsicum diced small
- 2 tbs plain flour
- 2 cups milk
- 1 cup tasty cheese
- 2 tsp vegetable stock powder
- 1 pinch salt and pepper *to taste
Instruction
- Boil potato and sweet potatoes for about 10 minutes, until just tender and place in casserole dish. Add remaining vegetables.
- Cheese sauce: Melt butter and sauté leek and capsicum for 5 minutes.
- Stir in flour and heat for one minute. Remove from heat and gradually stir in milk. Return to heat and allow mixture to boil and thicken.
- Remove from heat and stir in cheese, stock powder, salt and pepper.
- Pour over the vegetables and sprinkle with breadcrumbs.
- Bake at 180C for approximately 40 minutes or until browned on top.
