Ingredients
The following ingredients have 4 Servings
- 1 block extra firm tofu
- 1/3 cup low sodium soy sauce or tamari
- 1 tbsp rice vinegar
- 2 teaspoons chili paste (I used sambal oelek)
- 1 teaspoon minced garlic
- 1 tablespoon fresh grated ginger
- 2 cups cooked white rice
- 1 small diced cucumber
- 1/2 cup pickled red onion
- 1 cup cooked & shelled edamame
- 1 avocado
- 3 green onions
Instruction
- Remove the tofu from the package and drain off the liquid.
- Cut into roughly 1 inch cubes.
- In a large, shallow bowl, whisk together all of the marinade ingredients.
- Add in the tofu and toss to coat.
- Let marinate for 20-30 minutes.
- Meanwhile, prep the rest of the bowls.
- Start with a base of rice, then add on top the cucumber, pickled red onion, edamame, avocado and scallions.
- When the tofu is done marinating, add on top of the bowls. Save the rest of the marinade and drizzle on top.
- Sprinkle with sesame seeds & enjoy!
