Ingredients

The following ingredients have 4 Servings
  • 1 block extra firm tofu
  • 1/3 cup low sodium soy sauce or tamari
  • 1 tbsp rice vinegar
  • 2 teaspoons chili paste (I used sambal oelek)
  • 1 teaspoon minced garlic
  • 1 tablespoon fresh grated ginger
  • 2 cups cooked white rice
  • 1 small diced cucumber
  • 1/2 cup pickled red onion
  • 1 cup cooked & shelled edamame
  • 1 avocado
  • 3 green onions

Instruction

  • Remove the tofu from the package and drain off the liquid.
  • Cut into roughly 1 inch cubes.
  • In a large, shallow bowl, whisk together all of the marinade ingredients.
  • Add in the tofu and toss to coat.
  • Let marinate for 20-30 minutes.
  • Meanwhile, prep the rest of the bowls.
  • Start with a base of rice, then add on top the cucumber, pickled red onion, edamame, avocado and scallions.
  • When the tofu is done marinating, add on top of the bowls. Save the rest of the marinade and drizzle on top.
  • Sprinkle with sesame seeds & enjoy!
