The following ingredients have 4 Servings
  • 200 g (2 cups) flaked skinless almonds
  • 60 ml (1/4 cup) lemon juice
  • 60 ml (1/4 cup) olive oil
  • 60 ml (1/4 cup) water
  • 1 clove garlic
  • 2 Tbsp nutritional yeast
  • 1 1/2 tsp salt
  • 1 Tbsp olive oil (plus extra for brushing)
  • 1 large / 2 small leek (finely sliced)
  • 5 spring onions (scallions) (thinly sliced)
  • 4 cloves garlic (peeled and crushed)
  • 850 g (30 oz) frozen whole leaf spinach
  • finely grated zest of 1 lemon
  • 20 g (a large handful) fresh dill (finely chopped)
  • 20 g (a large handful) fresh mint (leaves only) (finely chopped)
  • 1 tsp dried oregano
  • 1/4 tsp ground nutmeg
  • 3 Tbsp nutritional yeast
  • salt and pepper
  • 2 packs (18 sheets, plus a couple extra for patching) phyllo (filo) pastry (thawed if frozen)
