The following ingredients have 4 Servings
- 200 g (2 cups) flaked skinless almonds
- 60 ml (1/4 cup) lemon juice
- 60 ml (1/4 cup) olive oil
- 60 ml (1/4 cup) water
- 1 clove garlic
- 2 Tbsp nutritional yeast
- 1 1/2 tsp salt
- 1 Tbsp olive oil (plus extra for brushing)
- 1 large / 2 small leek (finely sliced)
- 5 spring onions (scallions) (thinly sliced)
- 4 cloves garlic (peeled and crushed)
- 850 g (30 oz) frozen whole leaf spinach
- finely grated zest of 1 lemon
- 20 g (a large handful) fresh dill (finely chopped)
- 20 g (a large handful) fresh mint (leaves only) (finely chopped)
- 1 tsp dried oregano
- 1/4 tsp ground nutmeg
- 3 Tbsp nutritional yeast
- salt and pepper
- 2 packs (18 sheets, plus a couple extra for patching) phyllo (filo) pastry (thawed if frozen)
- sesame seeds to garnish (optional)
