Ingredients
The following ingredients have 2 Servings
- 1 cup diced pineapple
- 1 tablespoon vegan mayonnaise (or regular if you are not vegan)
- 1 tablespoon lime juice
- 1 lime (zested)
- 1/4 - 1/2 cup chopped cilantro
- 1/2 cup cooked quinoa
- 1 avocado (cubed)
- salt (to taste)
Instruction
- Combine ingredients in a large bowl and mix (adding avocado last). Season with salt to taste.
