Ingredients

The following ingredients have 2 Servings
  • 1 cup diced pineapple
  • 1 tablespoon vegan mayonnaise (or regular if you are not vegan)
  • 1 tablespoon lime juice
  • 1 lime (zested)
  • 1/4 - 1/2 cup chopped cilantro
  • 1/2 cup cooked quinoa
  • 1 avocado (cubed)
  • salt (to taste)

Instruction

  • Combine ingredients in a large bowl and mix (adding avocado last). Season with salt to taste.
