Ingredients

The following ingredients have 4 Servings
  • 2 tbsp chia seeds (+ 6 tbs water)
  • 1 cup almond flour
  • 1/2 cup coconut flakes
  • 1 cup rolled oats
  • 1/2 cup dried fruit
  • 2 cups banana (mashed)
  • 1/3 cup pepitas
  • 1/3 cup sunflower seeds
  • 1/3 cup sliced almonds
  • 1/2 tsp vanilla extract (or 1/2 vanilla bean, scraped)
  • Pinch ground cinnamon
  • Pinch sea salt

Instruction

  • Preheat oven to 350°F (180°C).
  • Grease or line 8 inch square baking dish with parchment (baking) paper.
  • Soak chia seeds in 6 tablespoons of water for 5 minutes.
  • Combine the chia seeds and remaining ingredients in a bowl.
  • Press the mixture into the prepared baking sheet.
  • Bake for 25-35 minutes, or until golden on top. Remove from oven and let cool.
  • Slice into 8 bars.
  • Store in an airtight container in the fridge for up to 5 days.
