Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon coconut oil
  • 1-2 tablespoons minced ginger
  • 1-2 tablespoons minced garlic
  • 1/4 cup chopped red onions
  • 2-4 tablespoons masaman curry paste (depending on how spicy it is)
  • 1 cup red lentils
  • 5-6 cups vegetable broth
  • 1 cooked carrot (or raw. diced)
  • 1 tablespoon gluten free tamari
  • 1 cup cooked red rice (optional (can use white or brown rice instead))
  • lime juice for garnish

Instruction

  • Heat coconut oil in pot over medium-high heat. Add ginger, garlic and red onions. Cook 1-2 minutes until fragrant. (If you are using raw carrot add it now)
  • Add massaman curry paste and mix everything together, cooking for 1-2 minutes.
  • Add red lentils and stir.
  • Add vegetable broth and tamari.
  • If you are using cooked carrot add it now (if you made your own vegetable broth use the cooked carrot from the broth).
  • Bring soup to a boil, reduce heat and simmer 10-15 minutes until lentils are cooked (add more broth if needed).
  • Serve with red rice and a squeeze of lime juice.
