Ingredients
The following ingredients have 4 Servings
- 1 tablespoon coconut oil
- 1-2 tablespoons minced ginger
- 1-2 tablespoons minced garlic
- 1/4 cup chopped red onions
- 2-4 tablespoons masaman curry paste (depending on how spicy it is)
- 1 cup red lentils
- 5-6 cups vegetable broth
- 1 cooked carrot (or raw. diced)
- 1 tablespoon gluten free tamari
- 1 cup cooked red rice (optional (can use white or brown rice instead))
- lime juice for garnish
Instruction
- Heat coconut oil in pot over medium-high heat. Add ginger, garlic and red onions. Cook 1-2 minutes until fragrant. (If you are using raw carrot add it now)
- Add massaman curry paste and mix everything together, cooking for 1-2 minutes.
- Add red lentils and stir.
- Add vegetable broth and tamari.
- If you are using cooked carrot add it now (if you made your own vegetable broth use the cooked carrot from the broth).
- Bring soup to a boil, reduce heat and simmer 10-15 minutes until lentils are cooked (add more broth if needed).
- Serve with red rice and a squeeze of lime juice.
