Ingredients

The following ingredients have 4 Servings
  • 8 ounces extra firm tofu (drained and crumbled (1/2 a block))
  • 1/4 teaspoon turmeric ((for color - optional))
  • 1 tablespoon toasted sesame oil
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 1 clove garlic (minced)
  • 1 teaspoon minced ginger
  • 2 tablespoons gluten free hoisin sauce
  • 1 tablespoon low sodium gluten free tamari
  • 2 cups cooked brown or white rice (cooled)
  • Salt and pepper
  • 2 green onions (chopped and green parts reserved for garnish)

Instruction

  • Heat sesame oil in a large skillet over medium heat.
  • Add crumbled tofu and turmeric. Cook until starting to brown, about 5 minutes. Add salt and pepper.
  • Add carrots to the pan. Cook for several minutes until crisp tender.
  • Add garlic, ginger, hoisin sauce, tamari, and more salt and pepper as needed. Cook 30 seconds.
  • Add white parts of the green onion, peas, rice and cook for a few minutes longer.
  • Top with the green parts of the green onion.
