Ingredients
The following ingredients have 2 Servings
- 1/2 cup full-fat coconut milk
- 1/2 cup unflavored soy or almond milk
- 3 tbsp. cornstarch
- 3 tbsp. all-purpose flour ((you could probably get away with using whole wheat flour too))
- 1 tbsp. maple syrup
- 1 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- pinch salt
- 6 bread slices
Instruction
- Lightly oil and preheat a Belgian waffle iron (one with square cavities, see note). In a medium bowl, whisk together coconut milk, soy or almond milk, cornstarch, flour, maple syrup, vanilla, cinnamon and salt.
- Dip both sides of a bread slice into batter and place into one of your waffle iron cavities. If your waffle iron makes two waffles at a time, repeat and place a slice into the other cavity. Close waffle iron and cook according to manufacturer's directions (they're usually done when steam stops coming out of the iron). Repeat until you've used all of your bread and batter.
- Top with maple syrup, vegan butter, or your favorite waffle/French toast toppings. Serve.
