- 1 (14 ounce) package firm or extra firm tofu, (drained, pressed, and cut into 1/2 inch pieces)
- 2 tablespoons vegan butter
- 1 medium onion, (diced)
- 2 medium celery stalks, (diced)
- 2 medium carrots, (diced)
- 2 garlic cloves, (minced)
- 1/4 cup all-purpose flour
- 1/2 cup dry white wine
- 4 cups vegetable broth, (plus more as needed)
- 1 teaspoon dried thyme
- 1 teaspoon rubbed sage
- 2 bay leaves
- 1 cup raw cashews, (soaked in water 4-8 hours and drained)
- 1 cup unflavored and unsweetened non-dairy milk
- 1/2 cup frozen peas, (thawed)
