Ingredients
The following ingredients have 4 Servings
- 2 peppers (chopped(I used 1 green & 1 orange pepper))
- 1 onion (chopped)
- 3 garlic cloves (minced)
- 1 bottle (16 oz) salsa (I used Herdez in medium)
- 2 tbsp tomato paste
- 3 cans beans (I used 1 kidney, 1 black, 1 pinto)
- 4 cups vegetable broth
- 3 tbsp chili powder (this is spicy! Use half if you prefer mild chili)
- 1 tbsp each cumin, cayenne, smoked paprika, garlic powder (this is spicy! Use half if you prefer mild chili)
- sea salt & fresh pepper
Instruction
- Heat olive oil over medium heat and saute peppers, and onions, seasoned with sea salt & pepper, until crisp tender, about 5 minutes, then add minced garlic and stir
- Add salsa, tomato paste, and spices and stir well
- Add beans and broth, salt & pepper to taste.
- Bring to boil, reduce heat to simmer and cook for 20-30 minutes, stirring occasionally
- Serve over cooked grains or potatoes (optional)
