Ingredients

The following ingredients have 4 Servings
  • 2 peppers (chopped(I used 1 green & 1 orange pepper))
  • 1 onion (chopped)
  • 3 garlic cloves (minced)
  • 1 bottle (16 oz) salsa (I used Herdez in medium)
  • 2 tbsp tomato paste
  • 3 cans beans (I used 1 kidney, 1 black, 1 pinto)
  • 4 cups vegetable broth
  • 3 tbsp chili powder (this is spicy! Use half if you prefer mild chili)
  • 1 tbsp each cumin, cayenne, smoked paprika, garlic powder (this is spicy! Use half if you prefer mild chili)
  • sea salt & fresh pepper

Instruction

  • Heat olive oil over medium heat and saute peppers, and onions, seasoned with sea salt & pepper, until crisp tender, about 5 minutes, then add minced garlic and stir
  • Add salsa, tomato paste, and spices and stir well
  • Add beans and broth, salt & pepper to taste.
  • Bring to boil, reduce heat to simmer and cook for 20-30 minutes, stirring occasionally
  • Serve over cooked grains or potatoes (optional)
