  • 1 cup rice flour
  • 1 tablespoon cornstarch
  • 3/4 teaspoon kosher salt (more to taste)
  • 1/2 teaspoon turmeric
  • 3/4 teaspoon ground coriander
  • 1/2 teaspoon ground porcini mushroom powder
  • 1/4 teaspoon garlic powder
  • 2 scallions (sliced)

  • olive oil for frying
  • 1/2 large onion (sliced thinly)

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 tablespoons rice vinegar

  • 1 teaspoon soy sauce (use tamari if gluten free)

  • 1/4 to 3/4 teaspoon red pepper flakes (depending on the amount of heat you want)
