Ingredients
The following ingredients have 2 Servings
- 1 cup rolled oats
- 2 cups water
- 1 cup vanilla almond milk ((or any nondairy milk))
- 1-2 tbsp maple syrup
- 1/2 tsp cinnamon ((and more for sprinkling))
- 1/8 tsp salt
- 1 large apple ((peeled, cored, and cut into a 1/4-inch dice))
- 2 tbsp walnuts ((chopped))
Instruction
- Place the oats, salt and water in a heavy bottomed saucepan and bring to a boil.
- Add the chopped apples and half the almond milk. Stir well to mix.
- When the oatmeal returns to a boil, lower the heat to a simmer, cover with a lid, and let the oatmeal cook, stirring frequently, for about 15 minutes. If the oatmeal gets too dry, add some water or almond milk.
- When the oatmeal is smooth and very creamy, turn off the heat. Stir in the maple syrup and cinnamon and the remaining almond milk.
- Ladle out into bowls, sprinkle on some more cinnamon and walnuts, Serve immediately.
