Ingredients

The following ingredients have 4 Servings
  • 1 medium sized onion
  • 1 red pepper
  • 1 stick of celery
  • 1 cup cooked red beans
  • 2 small tomatoes
  • 5-6 garlic cloves
  • 1 jalapeno
  • Fresh oregano
  • 1 tsp cumin powder
  • 1/2 tsp chili powder
  • 2 tsp red wine vinegar
  • 1 tbsp tomato sauce
  • 2 tsp olive oil
  • Salt
  • 2-3 cup of vegetable stock

Instruction

  • Finely chop all the vegetables.
  • Heat the olive oil in a wok.
  • Add the finely chopped onions, celery, garlic and jalapeno.
  • Once the onions starts looking translucent, add the cumin powder and chili powder.
  • After 2 minutes, add the chopped tomato and the tomato sauce.
  • Once the tomatoes turn mushy, add the cooked beans along with the chopped peppers and the vinegar.
  • Add the vegetable stock and let it simmer on low flame for 30 mins.
  • Transfer a small portion of the chili into a grinder jar. Blend with a little stock to a coarse consistency.
  • Transfer it back to the wok and let it simmer for another 8-10 mins.
  • Remove from the flame.
  • Serve it warm.
