Ingredients
The following ingredients have 4 Servings
- 1 medium sized onion
- 1 red pepper
- 1 stick of celery
- 1 cup cooked red beans
- 2 small tomatoes
- 5-6 garlic cloves
- 1 jalapeno
- Fresh oregano
- 1 tsp cumin powder
- 1/2 tsp chili powder
- 2 tsp red wine vinegar
- 1 tbsp tomato sauce
- 2 tsp olive oil
- Salt
- 2-3 cup of vegetable stock
Instruction
- Finely chop all the vegetables.
- Heat the olive oil in a wok.
- Add the finely chopped onions, celery, garlic and jalapeno.
- Once the onions starts looking translucent, add the cumin powder and chili powder.
- After 2 minutes, add the chopped tomato and the tomato sauce.
- Once the tomatoes turn mushy, add the cooked beans along with the chopped peppers and the vinegar.
- Add the vegetable stock and let it simmer on low flame for 30 mins.
- Transfer a small portion of the chili into a grinder jar. Blend with a little stock to a coarse consistency.
- Transfer it back to the wok and let it simmer for another 8-10 mins.
- Remove from the flame.
- Serve it warm.
