Ingredients
The following ingredients have 16 Servings
- 2 eggs large
- 1 cup caster sugar
- 4 tbs vegetable oil
- 15g baking powder
- 2 cups continental flour
- 200ml vanilla yoghurt
- 1/2 cup milk
- 8g vanilla sugar
- 425g canned cherrries drained pitted
- 855g canned apricots drained halved
Instruction
- Preheat oven to 160C. Grease a baking tray with unsalted butter and dust with continental flour.
- Add eggs and caster sugar to a bowl and combine with electric mixer until nice and fluffy. Add the remaining ingredients (apart from the fruit) and gently mix by hand until combined.
- Pour the mixture onto the baking tray and top with fruit. Place in a preheated oven for about 45 minutes or when a skewer comes out clean.
- Leave to cool, then dust with little bit of icing sugar mixed with extra vanilla sugar. Serve with your favourite coffee or tea.
