  • ⅔ cup granulated sugar

  • 2 ½ tablespoons cornstarch
  • 1 tablespoon unbleached all-purpose flour
  • 3 cups whole milk
  • ½ vanilla bean pod (seeds scraped)
  • 3 large egg yolks (lightly beaten)
  • 1 tablespoon bourbon
  • 1 tablespoon unsalted butter
  • 1 ½ teaspoons pure vanilla extract
  • 1 cup heavy whipping cream
  • 1 tablespoon confectioners' sugar
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • 4 tablespoons cold unsalted butter (cut into ½" pieces)
  • 3 tablespoons cold vegetable shortening
  • 3 tablespoons ice cold water
  • 1 cup granulated sugar (222g)
  • 3 tablespoons water
  • ½ cup heavy cream
  • 1 tablespoon bourbon
  • ½ teaspoon Fleur De Sel salt
