Ingredients

The following ingredients have 4 Servings
  • 2/3 cup raw cashews (I did not soak them first, you can if you prefer)
  • 4 medjool dates (pitted (softened first, if necessary))
  • 3/4 cup full fat coconut milk (*)
  • 1/2 cup unsweetened almond milk (*)
  • 2 tsp pure vanilla extract
  • 2 1/2 Tbsp fresh lemon juice (about 1 lemon)
  • handful ice
  • 1 scoop protein powder or collagen peptides (optimal)
  • Crumbled vanilla wafer cookies (optional**)

Instruction

  • Place all ingredients (except for the cookie crumbles) in a high speed blender <---what I have and love, and blend until very smooth. Serve right away topped with cookie crumbles if desired
