Ingredients

The following ingredients have 4 Servings
  • 1 cup Rice (Uncooked , I use sona masoori)
  • 3 cups Eggplant / Brinjal (Any kind, chopped into small cubes)
  • 4 tbsp Homemade spice powder (Check for recipe and ingredients below)
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp Turmeric powder
  • 1/8 tsp Asafetida
  • 2 Green Chilies
  • 1/4 cup Peanuts (I used slightly crushed)
  • few Curry Leaves
  • to taste Salt
  • 1 tbsp Kadalai paruppu / Channa dal
  • 1 tbsp Ullutham Paruppu / Urad dal
  • 1 tbsp Coriander seeds
  • 4 Red chilies
  • 1 tbsp Sesame seeds
  • 1/2 inch piece Cinnamon 
  • 1 tsp Fenugreek seeds / Vendhayam
  • 6 Cloves
  • 2 tbsp Desiccated Coconut
