Ingredients
The following ingredients have 4 Servings
- 1 cup Rice (Uncooked , I use sona masoori)
- 3 cups Eggplant / Brinjal (Any kind, chopped into small cubes)
- 4 tbsp Homemade spice powder (Check for recipe and ingredients below)
- 2 tbsp oil
- 1 tsp mustard seeds
- 1/2 tsp Turmeric powder
- 1/8 tsp Asafetida
- 2 Green Chilies
- 1/4 cup Peanuts (I used slightly crushed)
- few Curry Leaves
- to taste Salt
- 1 tbsp Kadalai paruppu / Channa dal
- 1 tbsp Ullutham Paruppu / Urad dal
- 1 tbsp Coriander seeds
- 4 Red chilies
- 1 tbsp Sesame seeds
- 1/2 inch piece Cinnamon
- 1 tsp Fenugreek seeds / Vendhayam
- 6 Cloves
- 2 tbsp Desiccated Coconut
