Ingredients

The following ingredients have 4 Servings
  • 5 plum sliced
  • 1 cup plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 50 g butter softened
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1 egg
  • 1/2 tsp vanilla essence optional
  • 1 tbs butter softened

Instruction

  • Line a 23 cm cake tin with baking paper and preheat oven to 200C.
  • Place 1 tablespoon butter in base of cake tin and sprinkle with a little of the sugar, then arrange plum slices close together on top.
  • Mix flour, baking powder and bicarbonate of soda in a bowl.
  • In a separate bowl, cream butter and sugar then add egg and vanilla, if using, and mix until smooth.
  • Add flour mixture and milk to butter mixture, stirring until just combined. Pour batter over plums.
  • Bake for 25 minutes or until a knife inserted comes out clean.
  • Cool for 5 minutes then invert onto a plate.
