Ingredients
The following ingredients have 4 Servings
- 5 plum sliced
- 1 cup plain flour
- 1/2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 50 g butter softened
- 3/4 cup sugar
- 1/2 cup milk
- 1 egg
- 1/2 tsp vanilla essence optional
- 1 tbs butter softened
Instruction
- Line a 23 cm cake tin with baking paper and preheat oven to 200C.
- Place 1 tablespoon butter in base of cake tin and sprinkle with a little of the sugar, then arrange plum slices close together on top.
- Mix flour, baking powder and bicarbonate of soda in a bowl.
- In a separate bowl, cream butter and sugar then add egg and vanilla, if using, and mix until smooth.
- Add flour mixture and milk to butter mixture, stirring until just combined. Pour batter over plums.
- Bake for 25 minutes or until a knife inserted comes out clean.
- Cool for 5 minutes then invert onto a plate.
