Ingredients

The following ingredients have 4 Servings
  • 1 cup Olive Oil
  • 1 cup Soy Sauce
  • 1 cup freshly squeezed Lime Juice
  • 1/3 cup chopped Cilantro
  • 1 teaspoon finely minced canned Chipotle Peppers in Adobo Sauce (to taste (add more for extra heat))
  • 1 tablespoon Light Brown Sugar
  • 1 splash Grand Marnier
  • 1 splash Tequila
  • 2 pounds fresh Jumbo Shrimp (about 24 shrimp, peeled, deveined and rinsed)
  • Lime Slices (to garnish)

Instruction

  • If using wooden or bamboo skewers, soak in water for 1 hour before using.
  • Combine all ingredients, except shrimp and lime slices, in a small mixing bowl. Whisk until well-mixed and smooth.
  • Place 4 to 6 shrimp on each skewer.
  • Place shrimp skewers in a shallow pan, long enough to lay skewers flat.
  • Pour prepared marinade over shrimp. Allow to marinate for 10 to 15 minutes or longer while you start your grill.
  • Heat grill to medium hot.
  • Place skewers on grill and cook until shrimp are done.
  • Serve with rice and garnish with slices of lime.
