Ingredients

The following ingredients have 4 Servings
  • 1 cup white rice (dry)
  • 2 cups water
  • 1 15-ounce can cannellini beans (drained and rinsed)
  • 1 bell pepper (diced)
  • 1/2 red onion (diced)
  • 1/2 cup frozen corn (thawed)
  • 1-2 jalapeños (diced)
  • 4 cups spinach
  • 2 avocados (diced)
  • 1/2 cup BBQ sauce
  • 1/4 cup vegan ranch
  • cilantro (to taste)

Instruction

  • Combine rice and water in a pot and bring to a boil. Cover and reduce heat to low. Simmer until water evaporates (approx. 10 minutes).
  • While rice is cooking, combine bell pepper, red onion, corn and jalapeño in a bowl.
  • To assemble, layer spinach, rice, beans, pepper/onion mixture, avocado, BBQ sauce, ranch and cilantro in each bowl.
  • Serve and enjoy!
