Ingredients
The following ingredients have 5 Servings
- 4 Roma tomatoes, seeded and diced
- 2 cucumbers, seeded and diced
- 1 green pepper, seeded and diced
- 1/2 small red onion, sliced
- 1/2 cup pitted black, or Kalamata olives (optional)
- 2 Tbsp apple cider vinegar
- 2 Tbsp fresh lemon juice
- 3-4 Tbsps Good quality olive oil, or avocado oil
- Sea salt and freshly ground black pepper, to taste
- Optional add-in ideas:
- 4 ounces Greek feta cheese, diced
- 1/4 cup chopped flat-leaf parsley, no stems
- 1 Tbsp fresh chopped dill
- 2 Tbsp fresh chopped mint leaves
- 1 tsp sumac (Turkish) seasoning
Instruction
- Toss all ingredients except feta cheese, gently in a large glass bowl. Let sit at room temperature for 1 hour.
- Toss in the feta just before serving and taste for seasoning and adjust seasonings, as you wish.
