Ingredients

The following ingredients have 4 Servings
  • 2 russet potatoes (cut lengthwise into wedges (about 8 per potato))
  • 1/4 cup extra virgin olive oil
  • 3/4 tsp kosher salt
  • 1/4 cup Parmesan Cheese (freshly grated)
  • 2 tbsp fresh parsley (chopped)

Instruction

  • Preheat the oven to 425.
  • In a medium bowl, toss the potatoes with the olive oil and the salt.
  • Line a baking sheet with parchment paper and spread the potatoes in a single layer.
  • Roast for 30 to 35 minutes.
  • Sprinkle the Parmesan cheese and then the parsley.
