Ingredients
The following ingredients have 4 Servings
- 1 tbsp Sesame Oil
- 1 clove Garlic (crushed)
- 1 tsp Grated Ginger
- 1 tsp Szechuan Peppercorns (crushed)
- 500 g Turkey Thigh Mince
- 1 Red Chilli (deseeded and chopped)
- 200 g Pak Choi (ends trimmed and broken into leaves)
- 4 servings Udon Noodles (cooked)
- Chopped Peanuts (to serve)
- Lime Wedges (to serve)
- 2 tbsp Peanut Butter
- 1 tsp Miso
- 1 tbsp Rice Vinegar
- 1 tbsp Sesame Oil
- 3 tbsp Soy Sauce
Instruction
- Heat 1 tablespoon of sesame oil to a wok and heat over a high heat until nearly smoking. Add the garlic, ginger and sichuan pepper corns to the wok and cook for 20 seconds before adding the turkey mince. Cook for 10 minutes until there's no more pink bits and some parts are starting to crisp.
- Meanwhile make the sauce by mixing all the ingredients together. Add the pak choi and chilli to the wok and quickly cook for a couple of minutes. Add the sauce and cook for another 2 minutes.
- Serve the turkey with the udon noodles and topped with the chopped peanuts and slice of lime.
