Ingredients

The following ingredients have 4 Servings
  • 5-6 lb leg of lamb (bone removed, butterflied)
  • 16 oz spinach
  • 4 tablespoons garlic (minced)
  • 2 tablespoons olive oil
  • 1/4 cup golden raisins
  • 1/4 cup pine nuts
  • 1/4 cup basil
  • 1/3 cup goat cheese
  • salt & pepper, to taste

Instruction

  • Preheat oven to 350 F. Bone, trim, and butterfly your lamb's leg (or have your butcher do it for you.)
  • Saute the spinach and garlic in a pan over medium heat until the spinach is reduced significantly in size or about 2 minutes. Tip into bowl and add the golden raisins and goat cheese.
  • Spread the spinach mixture onto the inside of the lamb's leg then roll and secure with twine (or aluminum foil!)
  • Place into the oven for 1 to 1 1/2 hours, or until internal temperature reaches 145 F.
  • Let the leg rest for 10-15 minutes, slice, serve, and enjoy!
