Ingredients
The following ingredients have 12 Servings
- 4 medium sweet potato
- 1 small onion
- 1 pound Chicken, ground, raw
- 2 cloves garlic
- 1 cup salsa
- 2 cup spinach
- 1/2 cup cheese, cheddar or colby, lowfat
- 2 tablespoon cilantro
Instruction
- Preheat oven to 350 degrees and bake potatoes until soft enough for a toothpick to stick all the way in. I baked mine for about an hour.
- In a medium skillet over medium heat, drizzle a little olive oil and add chopped onion. Let cook for 5 minutes and then add ground chicken and garlic. (I used chicken sausage.)
- Cook until browned and remove from heat. Stir in salsa.
- Roughly chop spinach and then add to skillet and stir in. The residual heat from the meat and onions will cook it down.
- When potatoes are cooked, remove and let cook for a few minutes until cook enough to handle. Cut lengthwise and hollow out using a spoon. Add the parts of the potatoes that your remove from the skins to the skillet. Stir into meat mixture and salt and pepper as needed.
- Fill potato skins with meat/potato mixture and top with a little cheese.
- Return to the oven and bake for 10-15 minutes or until heather through and cheese has melted.
- Top with cilantro, sour cream, bacon bits or whatever your family likes!
