Ingredients
The following ingredients have 7 Servings
- All Purpose Flour (Maida) - 1.5 cup + 2 tbsp
- Sugar - 1 cup (Reduce to 3/4 cup if you are making as tea cake)
- Eggs - 3 (Add 3/4 cup of yogurt for eggless version)
- Butter - 1/2 cup (113 gms unsalted and at room temperature)
- Oil - 1/4 cup
- Baking Powder - 1 tsp
- Baking Soda - 1/4 tsp
- Milk - 1/4 cup
- Vanilla Essence - 1 tsp
- Tutti Frutti - 1/2 cup
- Cherries - 1/4 cup
Instruction
- Mix the dry ingredients (maida, baking powder and baking soda) in a bowl. Sift it 2-3 times to mix it as well as make it fluffy.
- Take the tutti frutti and cherries in a small bowl. Add 2 tbsp of maida and mix well to coat well. This step is important to evenly distribute the tutti frutti throghout the cake. If you skip this step, the tutti frutti will sink to the bottom of the cake while getting baked.
- Take a big mixing bowl, add the room temperature butter in it. Whip it with a hand whisk or electric hand blender for 2-3 minutes till it become light and fluffy.
- Powder the sugar and add it to the butter. Whip it again for 2-3 minutes till the sugar gets completely dissolved.
- Add the room temperature eggs to this one by one and continue whipping.
- After the mixture gets nice and creamy, add the oil and mix well. Next mix the vanilla essence to this.
- Now add the sifted dry ingredients with this prepared wet mix little by little. Add the milk alternatively and mix with a spatula. Do not use electric blender at this stage.
- Add the flour dusted tutti frutti in this cake mix. Mix well with a spatula.
- Prepare a 8" cake pan or a 9x5 loaf pan. I usually add parchment paper at the bottom and apply some oil. Preheat the oven to 170 degree celcius.
- Add the cake batter to the prepared cake tin. Tap the cake tin 7-10 times to even out the top and remove the air bubbles. Add few tutti frutti on top.
- Bake it for 45 minutes in 8" pan or 60-65 minutes in a loaf pan. If you insert a knife or toothpick it should come out clean.
- After it cools a bit, carefully shift the cake in a cooling rack and cool completely before slicing. If you cut it before that it will crumble up. Enjoy with a cup of tea.
