Ingredients

The following ingredients have 2 Servings
  • 1/2 cup truRoots Whole Grain Sprouted Quinoa
  • 1 cup water
  • 1 tbsp coconut oil
  • 1/4 cup peanuts
  • 1/4 cup cashew nuts
  • 1 tsp black mustard seeds
  • 1/4 tsp asafetida
  • 1 tbsp whole urad dal (optional)
  • 3 dried red chillies (or sub with 1/2 tsp chili flakes)
  • 8-10 curry leaves
  • salt (to taste)
  • 1/2 tsp turmeric powder
  • 1/2 lemon
  • 2 tbsp minced cilantro

Instruction

  • Bring water and quinoa to a boil, switch off heat and cover and keep for 15 mins, till all the water is absorbed.
  • Meanwhile, heat the oil and add the mustard seeds to it. Once they splutter, add the peanuts and cashew nuts. Roast till they turn slightly brown.
  • Add the asafetida, urad dal , chilies and curry leaves. Give it a quick stir. 
  • Switch off heat and add the turmeric powder immediately. Add the salt too and mix well, till the raw smell of turmeric goes away.
  • Fluff the quinoa with a fork and add to the spice mixture. Mix well. 
  • Squeeze the lemon juice over it and toss well. Garnish with cilantro and serve hot.
