Ingredients
The following ingredients have 2 Servings
- 1/2 cup truRoots Whole Grain Sprouted Quinoa
- 1 cup water
- 1 tbsp coconut oil
- 1/4 cup peanuts
- 1/4 cup cashew nuts
- 1 tsp black mustard seeds
- 1/4 tsp asafetida
- 1 tbsp whole urad dal (optional)
- 3 dried red chillies (or sub with 1/2 tsp chili flakes)
- 8-10 curry leaves
- salt (to taste)
- 1/2 tsp turmeric powder
- 1/2 lemon
- 2 tbsp minced cilantro
Instruction
- Bring water and quinoa to a boil, switch off heat and cover and keep for 15 mins, till all the water is absorbed.
- Meanwhile, heat the oil and add the mustard seeds to it. Once they splutter, add the peanuts and cashew nuts. Roast till they turn slightly brown.
- Add the asafetida, urad dal , chilies and curry leaves. Give it a quick stir.
- Switch off heat and add the turmeric powder immediately. Add the salt too and mix well, till the raw smell of turmeric goes away.
- Fluff the quinoa with a fork and add to the spice mixture. Mix well.
- Squeeze the lemon juice over it and toss well. Garnish with cilantro and serve hot.
