Ingredients

The following ingredients have 2 Servings
  • 2 large chicken breasts (cut in half, lengthwise)
  • 1/4 cup avocado or olive oil
  • 1 head of cauliflower cup into florets
  • 2-3 cups broccoli florets
  • 3 tsp. turmeric plus (with some to season chicken)
  • 3 tsp. garlic (minced or crushed)
  • 1 1/2 Tbsp. cumin
  • Salt (pepper, and garlic powder to season)

Instruction

  • Preheat oven to 450 degrees.
  • In large bowl, combine cauliflower and broccoli. Drizzle oil evenly and toss. Sprinkle on turmeric, cumin, and garlic. Toss until evenly coated.
  • Take chicken breast and cut in half, lengthwise. Tenderize chicken before sprinkling salt, pepper, turmeric, and garlic powder on each side.
  • On large baking sheet, spread out florets, giving them plenty of space to cook. Season with salt and pepper before placing in the oven. Cook for 20-24 minutes, flipping florets once or twice.
  • Reduce oven heat to 400. Place seasoned chicken on baking sheet and cook for 10-12 minutes.
  • When fully cooked, remove from oven. Sprinkle with cilantro and enjoy on top of your favorite grain or bed of greens.
