Ingredients

The following ingredients have 4 Servings
  • 4 boneless, skinless turkey breasts
  • olive oil
  • 2 Tbsps black peppercorns (crushed)
  • salt
  • 6 ripe tomatoes (chopped)
  • 1 Red onion (finely diced)
  • 4.5 ozs black Olives (pitted and chopped)
  • 1 Tbsp chopped Basil
  • 2 cloves garlic cloves (finely chopped)

  • Basil

Instruction

  • Lightly brush the turkey breast with olive oil. Sprinkle with the peppercorns and salt, pressing the peppercorns into the meat. Leave to stand for 20 minutes.
  • Heat the grill to high.
  • Grill the turkey breasts for 8-10 minutes, turning once during cooking, until cooked through. To test if the turkey is cooked -insert a skewer or knife into the meat - the juices should run clear with no trace of pink.
  • For the salsa: stir together the tomatoes, onion, olives, basil and garlic. Season to taste with salt and pepper.
  • Divide the salsa between 4 serving plates and place the turkey breasts on top. Garnish with basil.
