Ingredients

The following ingredients have 4 Servings
  • 1 tbsp extra virgin olive oil
  • 1 lb extra lean ground turkey
  • 1 clove garlic (crushed)
  • 1/4 cup spinach (chopped)
  • 1/4 cup shredded carrots
  • 1/2 red bell pepper (diced)
  • 1/2 zucchini (diced)
  • 3 green onions (chopped)
  • 2 tbsp tomato paste
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1 cup Pecorino Romano
  • 1 tomato (diced)
  • 1 cup iceberg lettuce (shredded)
  • 1/2 cup low fat sour cream
  • 1/2 cup fresh cilantro
  • 1 bag whole wheat tortilla chips

Instruction

  • Heat a medium non-stick frying pan over medium-high. Add 1 teaspoon oil, then garlic, chili powder, cumin and salt. Stir until fragrant, 30 sec. Add tomato paste, carrots, bell pepper and green onions. Cooking for 5 minutes. Crumble in turkey. Cook, breaking meat up with a fork, until it’s no longer pink, 4 to 5 min. (I used ground turkey breast so there was virtually no fat but you may have to drain off any excess fat at this point. Ask your butcher to grind it up for you.)
  • Add spinach and zucchini, cook for 2 minutes, remove from heat.
  • Turn broiler on.Spread tortilla chips out on baking sheet. Spoon turkey mixture over, then sprinkle with cheese.
  • Broil in top third of oven just until cheese melts, 1-2 minutes. min. Serve topped with lettuce, sour cream, tomato, green onion and cilantro.
