Ingredients

The following ingredients have 3 Servings
  • 400g turkey breast mince
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 tsp ground coriander
  • vegetable oil
  • 2 Little Gem lettuces
  • 100ml low-fat natural yogurt
  • 1 lemon, juiced
  • 2 tsp mild curry powder
  • 1/4 white cabbage, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 carrot, grated
  • sultanas, a handful

Instruction

  • Put the turkey mince, ginger and garlic pastes, paprika, chilli powder and ground coriander in a bowl, season and mix well. Form into 9 burgers and chill for 20 minutes.
  • For the slaw, whisk together the yogurt, lemon juice and curry powder, and season.
  • Mix in the cabbage, onion, carrot and sultanas.
  • Heat 1 tbsp vegetable oil in a large frying pan, rolling the pan to coat well.
  • Add the burgers and fry gently for 5 minutes on each side, until caramelised and cooked through.
  • Serve with lettuce ‘buns’ piled high with slaw.
