Ingredients

The following ingredients have 8 Servings
  • 1 lb lean ground turkey
  • 1 tbsp oil
  • 1 small onion (chopped)
  • 12 large eggs (lightly beaten)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tsp Italian Herbs
  • 1 package (16 ounces frozen shredded hash brown potatoes, thawed)
  • 1 cup 4 ounces 2% shredded cheddar cheese

Instruction

  • Heat oil in a large skillet and add the chopped onion and saute for a couple of minutes.
  • Then add the ground turkey and sprinkle on the Italian herbs and cook on a medium - high heat for 3-4 minutes, stirring frequently.
  • In a bowl, whisk together eggs with the salt and pepper.
  • Stir in the hash browns, half the cheese, onions and turkey, to the bowl with the eggs.
  • Transfer to a greased 13x9-in. baking dish and top with remaining cheese.
  • Bake, uncovered, at 350° for 35-45 minutes or until a knife inserted near the center comes out clean.
