- 1 1/2 cups chopped yellow onion ((2 onions))
- 1/4 cup all-purpose flour
- 1/4 teaspoon thyme leaves
- 1/2 teaspoon salt + plus more to taste as needed
- 1/2 teaspoon ground black pepper
- 2 cups chicken stock (heated)
- 1 tablespoon Cognac, Brandy or Bourbon ((optional))
- 1 tablespoon heavy cream ((optional))
