Ingredients
The following ingredients have 4 Servings
- 1 medium onion (diced )
- 1 large carrot (grated)
- 1 lbs turkey breast
- 4 tbsp vegetable oil
- salt and pepper to taste
- 1/2 tsp dry oregano
- 29 oz can of peas
- 2 bay leaves
- 2 tbsp tomato paste
- water
- Non stick skillet
- bowl
- pot with a lid
- bamboo spoon
- sharp knife
- vegetable grater
Instruction
- In a non stick skillet, heat 2 tbsp oil then saute onions until glassy. Add carrots and cook for 2 more minutes, stirring.
- Dice turkey breast and transfer to a bowl.
- Add 1 tbsp oil, salt and pepper and dry oregano. Mix well to coat evenly.
- In a non stick skillet, heat 1 tbsp oil then cook turkey until golden, on both sides.
- Drain the peas and rinse well.
- Transfer to a pot and top with cooked turkey and the carrots onion mix.
- Add water just enough to cover the ingredients
- Add bay leaves.
- Then cover with a lid.
- Bring to a boil then simmer for 15 minutes.
- Add tomato paste and stir to dissolve.
- Keep simmering, uncovered, until some of the water dissolves, about 10 more minutes.
