Ingredients
The following ingredients have 4 Servings
- 1 clove garlic cloves (finely chopped)
- soybean oil
- 3 cups fresh Spinach
- Nutmeg
- 0.5 cup peeled Walnut
- 1 Lime (zest grated, juiced)
- 25 ozs turkey breasts (ready to cook)
- 1 Tbsp honey
- 1 Tbsp soy sauce
- 0.5 inch fresh ginger (grated)
Instruction
- Fry the garlic in a pot with 1 tbsp oil. Add the spinach and allow to wilt. Season with salt, ground black pepper and nutmeg. Remove from the heat and drain.
- Dry roast the nuts, remove from the pan and leave to cool. Stir into the spinach along with the lime zest and season to taste.
- Preheat the grill to hot.
- Cut a pocket in each turkey breast and fill with the spinach mixture. Close with kitchen twine or tooth picks. Mix together the honey, soy sauce, 2 tbsp lime juice, 4 tbsp oil and the ginger. Season with salt and ground black pepper and brush onto the meat. Place on the grill and cook slowly for 25-30 min until golden brown.
- Cut into slices and serve with a green salad.
