Ingredients

The following ingredients have 2 Servings
  • 1 Mango
  • 0.5 Lime
  • 0.5 bunch Lemon balm
  • 2 Turkey cutlets
  • salt
  • peppers
  • 1 Tbsp Canola oil
  • 2 Bagel
  • 1 Tbsp butter
  • Curry powder

Instruction

  • Peel mango with a potato peeler. Cut  flesh into thin slices around the pit.
  • Rinse lime half in hot water and wipe dry. Finely grate the zest and squeeze out the juice. 
  • Rinse lemon balm, shake dry, pluck leaves and cut into fine strips.
  • Rinse turkey cutlets, pat dry and season with salt and pepper. Heat the oil in a grill pan and cook the cutlets until browned and cooked through, 2-3 minutes on each side.
  • Split bagels in half and spread butter over bottom halves. Sprinkle with curry powder. Arrange the mango slices on the bottom halves.
  • Sprinkle the mango slices with a little lime juice and zest and the lemon balm.
  • Place cutlets on the mango slices then set the top bagel halves on the cutlets. Decorate as desired with small sandwich flag and serve.
  • Wrap tightly in plastic wrap if packing in a lunch box.
