Ingredients

The following ingredients have 4 Servings
  • 1 tbs oil
  • 1 onion diced
  • 2 tsp garlic crushed
  • 420 g canned pumpkin soup
  • 2 cups Massel Vegetable Liquid Stock
  • 1/2 tsp salt and pepper
  • 500 g butternut pumpkin diced
  • 425 g canned tuna drained
  • 1 tbs basil dried
  • 250 g penne
  • 1 cup tasty cheese grated

Instruction

  • Heat oil in large saucepan, add onion and garlic and cook until onion is soft.
  • Add soup and stock, bring to the boil, simmer for 5 minutes.
  • Season with salt and pepper.
  • Add pumpkin, tuna, basil and uncooked pasta and stir to combine.
  • Transfer to large ovenproof dish, cover and bake at 180C-200C for 30 minutes.
  • Sprinkle with cheese and continue to bake covered for another 30 minutes or until pasta is tender and cheese is golden.
  • Stand for 10 minutes before serving.
