Ingredients

The following ingredients have 4 Servings
  • 8 eggs (separated)
  • 2 Tbsps sugar
  • 1 organic lemon (juiced and zest grated)
  • 4 Tbsps flour
  • butter
  • 2 ripe Mangoes (peeled, flesh removed from the stone and sliced)

Instruction

  • Beat the egg whites until stiff. Mix together the egg yolks, sugar, lemon zest and flour with a good pinch of salt until creamy. Fold in the egg whites.
  • Heat the butter in a small pan. Using a small ladle pour the mixture into the pan and top with mango slices. Cover with a lid and fry for around 2-3 min on a low heat until golden yellow. Turn and fry for a further minute then remove from the pan and keep warm. Continue like this until the ingredients are used up.
