Ingredients
The following ingredients have 4 Servings
- 8 tortillas
- 1 small white onion (thinly sliced)
- 1 large courgette (cut into batons)
- 1 red pepper (cut into strips)
- 1 yellow pepper (cut ito strips)
- 1 clove garlic (minced)
- 1 tsp cayenne
- 1.5 tsp paprika
- 2 tsp cumin seeds (coarsely crushed in a pestle and mortar)
- 1 tsp brown sugar
- 2 tsp chilli flakes
- salt and pepper (to taste)
Instruction
- Heat a little oil in a frying pan until it’s really hot.
- Thinly slice the onions and add to the oil with a pinch of salt. Stir well and cook until they begin to soften.
- Add the peppers to the pan and cook on high; a little charring on the skin is also good! Cook them for 8 mins until they have softened through and add the garlic.
- Fry for a further 2 minutes before adding the batons of courgette to the pan.
- Fry for a further 5 mins, giving the courgette a chance to heat through.
- Add the spices to the pan and fry for a further 2-5mins. (Add a little water if the vegetables are beginning to stick but aren’t yet cooked through).
- Once all of the vegetables have softened but before they completely lose their shape serve in tortillas with any cheese, salsa, sour cream etc. that you choose.
