Ingredients
The following ingredients have 9 Servings
- 2 Tbsp olive oil
- 1 large onion, diced
- 3 cloves of garlic, minced
- 4 carrots, diced
- 4 stalks of celery, diced
- 1 Tbsp Italian seasoning
- 1 bay leaf
- 12 cups of chicken broth
- 1 (16 oz) pkg. cheese tortellini (fresh or frozen)
- 2 bouillon cubes
- salt and pepper to taste
- shredded parmesan cheese, optional for serving
- 4 cups shredded cooked chicken
Instruction
- In a stock pot, heat oil over medium heat. Add onion, garlic, carrots, celery, Italian seasoning, and bay leaf. Cook until vegetables are tender.
- Add the chicken broth and bouillon to the pot and bring to a boil.
- Add tortellini and simmer for 5 minutes or so until tortellini is tender.
- Add cooked chicken and simmer for a couple of minutes until heated through.
- Serve topped with parmesan cheese if desired. Serves 8-10.
