Ingredients

The following ingredients have 9 Servings
  • 2 Tbsp olive oil
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 4 carrots, diced
  • 4 stalks of celery, diced
  • 1 Tbsp Italian seasoning
  • 1 bay leaf
  • 12 cups of chicken broth
  • 1 (16 oz) pkg. cheese tortellini (fresh or frozen)
  • 2 bouillon cubes
  • salt and pepper to taste
  • shredded parmesan cheese, optional for serving
  • 4 cups shredded cooked chicken

Instruction

  • In a stock pot, heat oil over medium heat. Add onion, garlic, carrots, celery, Italian seasoning, and bay leaf. Cook until vegetables are tender.
  • Add the chicken broth and bouillon to the pot and bring to a boil.
  • Add tortellini and simmer for 5 minutes or so until tortellini is tender.
  • Add cooked chicken and simmer for a couple of minutes until heated through.
  • Serve topped with parmesan cheese if desired. Serves 8-10.
