Ingredients

The following ingredients have 8 Servings
  • 1 Tbs olive oil
  • 1 Tbs garlic (minced)
  • 2 14.5oz cans crushed tomatoes
  • 2 cups vegetable stock
  • 1 Tbs dried basil ((or use italian seasoning))
  • Salt and pepper (to taste)
  • 1.5 cups cooked brown rice

Instruction

  • In a large saucepan, heat the olive oil and cook the garlic for 30 seconds - do not brown or burn!!
  • Add the tomatoes, stock and seasonings and bring to a simmer.
  • Add cooked brown rice and heat through.
  • Check for seasoning and adjust.
  • Devour.
