Ingredients
The following ingredients have 4 Servings
- 2 tablespoons extra virgin olive oil
- 4 boneless skinless chicken breasts or thighs
- 3-4 ounces prepared basil pesto
- 2-3 large roma tomatoes (sliced)
- 8 ounce fresh mozzarella (sliced)
- sea salt and black pepper (to taste)
- 1 tablespoon Italian seasoning
- 2-3 tablespoons Parmesan cheese (grated)
Instruction
- Preheat oven to 400°. Lightly coat a baking dish with olive oil.
- If chicken breasts are thick and uneven, place in a plastic bag and pound to about 1/2 inch thick with a mallet (I use my rolling pin). Place on baking dish.
- Evenly spread basil pesto over each chicken piece and place tomato slices. Season with salt and black pepper, to taste.
- Place slices of mozzarella on top of tomatoes and sprinkle with Italian seasoning and Parmesan cheese.
- Place in pre-heated oven and bake for 20-25 minutes or until chicken is cooked through.
