Ingredients

The following ingredients have 2 Servings
  • 1/2 cup washed quinoa
  • 1 cup water
  • 1 tbsp butter
  • 4 medium tomatoes cut into small pieces
  • 6 small persian cucumbers
  • 1/2 red onion diced
  • 2 tbsp fresh parsley
  • juice from 1/2 lemon
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • optional: you can add dried oregano (, black olives and feta cheese to the salad)

Instruction

  • In a saucepan combine butter, water and quinoa and bring o a boil. Then reduce heat to low and cover.
  • Cook quinoa until water is absorbed, or about 20 minutes. Then fluff quinoa with a fork. Let it cool to a room temperature.
  • In a bowl combine quinoa, tomatoes, cucumbers, red onion, parsley and stir to combine.
  • Add salt, black pepper, olive oil and lemon juice and stir again.
