Ingredients

The following ingredients have 4 Servings
  • 500 g (1lb) tomatoes (roughly chopped)
  • 2 avocados (peeled and chopped)
  • 1 small red onion (thinly sliced )
  • 3 tbsp fresh basil (finely chopped)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • salt and pepper (to taste )

Instruction

  • Place the tomatoes in a large bowl then season generously with salt and pepper.
  • Add the avocado and red onion.
  • Mix together all the dressing ingredients and pour over the salad.
  • Gently toss to coat the vegetables in the dressing then serve.
