Ingredients
The following ingredients have 4 Servings
- 500 g (1lb) tomatoes (roughly chopped)
- 2 avocados (peeled and chopped)
- 1 small red onion (thinly sliced )
- 3 tbsp fresh basil (finely chopped)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- salt and pepper (to taste )
Instruction
- Place the tomatoes in a large bowl then season generously with salt and pepper.
- Add the avocado and red onion.
- Mix together all the dressing ingredients and pour over the salad.
- Gently toss to coat the vegetables in the dressing then serve.
